Malanga Eddoe (Yautia Eddo)

Malanga Eddoe or Yautia Eddo (Edo) is not exactly part of the Malanga family, however, often referred to as Malanga Eddoes in Spanish-speaking countries. It is smaller and rounder than regular malanga.

It is a starchy root with a round, hairy, rough-like texture that grows in a wide variety of sizes. Its white flesh is similar to that of white malanga. It is often used as a potato or yam substitute. It can either be baked, cooked, mashed, or however your creativity leads. It has tastes similar to regular malanga with a more bitter taste. 

Grown in Ecuador.
